Rory's Mexican Lasagna: Part 2

Mexican Lasagna
What's great about this recipe is that you don't really have to follow a
recipe.... You make it the way you like.. Consider the following more
guidelines for your dish
8- 10 inch Tortillas ( will have to cut in half and fry)
2 cups vegetable oil
1 teaspoon Butter
1 pound Ground beef( if you have vegetarians in the group use Morning Star
Ground beef or another meat substitute)
For extra meaty add 1/2 pound ground pork
3 cups shredded cheese blend Mexican blend works best
1 cup sour cream
1/2 cup milk
2 cups mild salsa ( you can go spicier if you like)
1 packet taco seasoning
1 packet fajita seasoning
1 red pepper sliced
1 green pepper sliced
1 onion sliced
Guacamole and sour cream for garnish for garnish
Chopped cilantro for garnish
Pre heat oven to 375
In a large saute pan cook all your ground meat and season with taco packet.
In another pan melt butter and add sliced peppers and onions saute till soft,
add half packet Fajita seasoning mix well. Mix together milk and sour cream,
set aside for later. In a deep 9 by 12 baking pan place 2 1/2 fried tortillas
halfs on bottom. Then layer Cooked meat over the tortillas then Salsa, then
peppers and onions then cheese then Sour cream. Place another layer of Tortillas
and repeat salsa, peppers and onions, cheese and sour cream. Top with last layer
of tortillas . Gingerly spread salsa over top and a nice final layer of cheese
over top. Place in oven till cheese is bubbling about 15 minutes. Pull out of
oven and garnish with Dollops of Sour cream and guacamole and serve.and sprinkle
with chopped cilantro
Fried Tortillas
In a large deep pan warm oil to 350 degrees
cut tortillas in 1/2
place in oil , one at a time till they turn golden brown and puffy, remove
from oil drain on paper towel set aside for later
