Bacon Wrapped Wahoo
Black Bean-Banana Mash
Mango Rum Butter
Bacon Wrapped Wahoo
1 tsp coriander seeds, whole toasted and ground
Sea Salt and Pepper to taste
1 piece good quality bacon per fish filet
Wrap bacon slice around fish and season with ground coriander, sea salt and pepper.
Black Bean Banana Mash
3 banana figs (baby bananas) or 1 ½ regular sized bananas)
1 cup black beans, cooked and rinsed
1 Idaho potato, peeled and cubed
1 habanero pepper
2 Tbs Butter
¼ cup heavy cream or milk
Salt and pepper to taste
Bring Potato to a boil in salted water, add peeled, sliced bananas, and habanero pepper (whole with one tiny knife prick) cook until potatoes are fork tender. Strain Potato banana mixture, (pull out the habanero and discard). Add butter, cream, and black beans. Beat until smooth, season with salt and pepper.
Mango Rum Butter
2 cups Mango Cruzan Rum
2 tbs butter
Bring rum to a boil, add butter and melt
