Fresh Ruby Red Trout with Green Chili Cream Sauce
 









Fresh Trout Filets
Kosher Salt and Cracked Pepper
Squeeze of Lime
 
Green Chili Cream Sauce
1 shallot,  minced
1 tablespoon garlic, minced
1/4 tsp cumin
1/4 tsp chili powder
1 cup fresh roasted, or canned green chilies-pureed
splash of vegetable stock
1/4 cup heavy cream
 
Saute minced shallot and garlic in olive oil, add cumin and chili powder.  Cook until translucent.
Add green chilies, and stock.  Bring to a boil and add cream.  Season with salt and pepper to taste.
