Dia Dean's Easter Key Lime Cake: Part 1

Dia's Key Lime Cake
Cake:
1 3-ounce package of lime-flavored gelatin
1 1/3 cups sugar
2 cups sifted flour
½ teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
Mix all dry ingredients together in a mixing bowl
5 large beaten eggs
1 ½ cups vegetable oil
¾ cup orange juice
1 ½ teaspoon lemon juice
½ teaspoon vanilla extract
Stir all liquids in with the dry ingredients.
Depending on your size cake pans, pour in 3 or 2 round cake pans.
Bake @ 350 degrees for 15 to 20 minutes
1 cup key lime juice, From about 25 to 30 key limes
1 cup confectioners’ sugar Mix juice and sugar together while cakes are cooking
Remove the cakes from the oven and pans and pour lime juice mixture over the cakes while they are still hot.
Mix icing and then spread with icing when cakes are cooled and layer them
Cream cheese icing
2 sticks butter
2 8 oz. packages cream cheese
1 Box confectioners’ sugar (16 oz)
Cream these items together and spread on cake

Dia recently moved from a little farming community south of Little Rock, Arkansas to Dalhart. Here in the Panhandle, Dia continues to live the family farm mantra. Her father, husband and brother all work the farm together. They farm wheat, cattle and corn while Dia does the book keeping. She, her mother and sister-n-law cook for the guys and haul food to the field everyday! They all live in the same neighborhood and there isn’t a day or night that they aren’t all together cooking something! She says they associate love with food.
