Rory's Bacon Wrapped Chicken with Maple Bourbon Glaze

Ingredients:
3 chicken breasts, cut into 1 inch by 1 inch cubes
wood skewers, soaked in water
10 slices bacon
salt and pepper

1.    Preheat oven or grill to 350
2.    Season chicken breast with salt and pepper
3.    Wrap each piece of chicken in a 1/2 a piece of bacon and skewer through to hold bacon in place
4.    Place 4 to 5 piecesper skewer
5.    Brush with maple bourbon glaze
6.    Place on cookie sheet and bake in oven for about 25 minutes or until bacon and chicken are completely cooked
7.    With a clean basting brush or spoon, baste chicken again with maple bourbon glaze
8.    Serve with a great side like whitecheddar and green chili grits.

Maple Bourbon Glaze

Ingredients:
1 tablespoon butter
1 shallot chopped
1 cup Jim Beam
1/2 cup soy sauce
2 tablespoons maple syrup
1/2 cup orange juice

Directions:


1.    In a small pot, add butter and shallots and sweat for 5 minutes
2.    Add bourbon and let flame burn until it burns out
3.    Add soy sauce, maple syrup and and orange juice and reduce by half.
