Rory's New Year's Money Maker Cabbage Soup

Ingredients:

1/2 pound bacon, coarsely chopped

2 1/2 pounds shredded green cabbage

1 medium onion, chopped

5 cans (16-oz. ) chicken broth

1 cup heavy cream

1 large potato small dice

1 can black eyed peas (Optional for luck)

salt and white pepper to taste

Shredded provolone or mozzarella cheese for garnish

Directions:

In a large pot, fry bacon until crisp over medium-high heat. Remove and set aside.  Add the cabbage and onion to bacon drippings, reduce heat to medium and saute, stirring occasionally, for 10 minutes or until the cabbage is wilted. Do not let it brown.

Add the chicken stock, potatoes  and simmer until the  potatoes, cabbage and onions are tender, stirring often. add Black eyed peas simmer 10 minutes . For a creamier soup, Remove from heat and transfer 3 cups of soup to a blender and puree ( or use an immersion blender). Return to soup pot and stir Heavy cream salt and pepper. Serve garnished with crisp bacon and shredded Cheese.
