Village Bakery's Chipotle Club Sandwich

Ingredients:
4 focaccia rolls
8 slices of ham
8 slices of turkey
8 pieces of pepper bacon
Chiptole Mayo
Slaw
8 thin sliced tomatoes
8 slices pepper jack cheese
Chipotle Mayo:
1 cup of mayo
1 t. canned chipotle peppers, blended until smooth
Mix until well combined
Slaw:
1 bag slaw mix
c. Chopped cilantro
c. Mayo
c. Mustard
2 t. Apple cider vinegar
c. Sugar
Dash of pepper, kosher salt & cayenne pepper
Whisk together all ingredients then pour over the slaw mix and cilantro. Toss all ingredients until well combined. (Can be made a day ahead)
Building the Sandwich
Split the foccacia rolls in half. On the top half of the focaccia bread, spread chipotle mayo. Layer the turkey, ham, bacon and cheese on the bottom half. Top with 2 slices of tomatoes and scoop of slaw.
