Rory's Pan-Seared Mahi Mahi with a Jalapeno Pesto and Roasted Red Pepper Mash

Mahi Mahi
Ingredients:
4 6-8 oz Mahi Mahi filets
1 tablespoon Olive oil
Cajun seasoning
Directions:
1. Oil and season each filet
2. In a medium nonstick pan, heat to medium heat and cook Mahi Mahi on each side for no more then 4 minutes
3. Top with Jalapeno pesto and serve
Jalapeno Pesto
2 oz fresh basilIngredients:
1 tbs Garlic
1 1/4 oz fresh cleaned Jalapeno
1/2 cup olive oil blend
1/2 tbs Cajun blend
1/8 tsp kosher salt
2 tbs Grated Parmesan
Directions
1. Place all ingredients in blender until pureed
Jalapeno pesto Can be used right out of the jar on chicken, vegetables, beef, fish, and pasta, with a little help you can make some amazing sauces, butters and flavor enhancers
Roasted Red Pepper Mash
4 red peppers roasted and cleanedIngredients:
1 cup chicken broth
3 cups mashed potatoes
1/3 cup Parmesan cheese
Sea salt and fresh pepper to taste
Directions:
1. Puree peppers and chicken broth
2. Fold in red pepper puree to mashed potatoes
3. Gently fold in Parmesan cheese and season to taste
